Ramps aka Wild Leeks (allium tricoccum)

Ramps grow in the understory of hardwood eastern forests. They produce 2” long bulbs and abundant green leaves. Their onion shallot flavor is sweet and suberb. It is highly sought after by chefs.

Ramps are perennials. They can live for several decades and thrive in the sun or shade. In their native habitat they do best under stands of mature sugar maple.
